Passion Fruit Piña Colada Popsicles

These passion fruit piña colada popsicles are easy to make, refreshing and nutritious.

The summer weather is really getting me into a tropical mood so I decided to make something that would makes me feel like I am lounging in some Caribbean beach sipping a piña colada instead of at home cranking up the air conditioner to stay cool.  Passion fruit, with its pleasantly sweet and tart flavors makes these piña colada inspired popsicles the perfect tropical treat to cool off during the summer while getting the nutrition your body needs without any guilt.

Passion Fruit Piña Colada Popsicles

Ingredients

  • 1 cup fresh pineapple chunks
  • 2 cup unsweetened coconut milk
  • 1 banana
  • 4 teaspoons honey optional
  • 2 cups passion fruit pulp I used Goya which you can find in Latino/Hispanic supermarkets

Instructions

  1. In a blender, combine the pineapple chunks, coconut milk, banana and passion fruit pulp,
  2. Puree until smooth.
  3. Place mix in freezer until it is half way frozen.
  4. Pour into popsicle mold, put the lid on the mold and insert sticks.
  5. Freeze for at least 6 hours.
  6. To unmold place molds water warm water (not hot) for 20-30 seconds and the popsicles will slide right off.
  7. To give the popsicles a two colored marbled look combine all ingredients except passion fruit pulp. Put both the piña colada and the passion fruit pulp in the freezer until they are almost frozen. Put a couple of spoonfuls of passion fruit pulp into the mold, then pour a couple of spoonfuls of piña colada mix and repeat a layer of each until the molds are filled. Put the lid on the mold and insert sticks. Freeze for at least 6 hours.
