5 minute skinny tuna tacos There is just something about a tortilla, maybe it’s because it reminds me of home back in Guatemala or maybe it’s just the possibilities: when it comes to combining ingredients into a tortilla to make a soft taco the possibilities are endless.  From flor de calabaza and shredded pork to tuna, if you combine the ingredients in the right way you can create a taco that is much more than a quick lunch or dinner solution: you get to make food that is fun to eat, fun to make and a delight to the palate.

Ingredients
  • 1 can of Bumble Bee Tuna with Chipotle
  • 1 Hass avocado, cut into small cubes
  • ¼ cup chopped tomato
  • ½ cup greek yogurt
  • 1 tablespoon chipotle in adobo
  • ¼ shredded purple cabbage
  • ¼ cup chopped parsley
  • 4 corn tortillas
  • 1 tablespoon lime juice
  • salt to taste
Instructions
  1. Mix the yogurt, chipotle and lime juice and a dash of salt.
  2. Drain the oil from the tuna.
  3. Top the tortilla with the tuna, tomato, avocado and red cabbage.
  4. Drizzle with the chipotle and yogurt "crema".
  5. Sprinkle with shredded cilantro.

I work out a lot and I am always in search of meals that are healthy and that pack a lot protein but few calories.  The tuna provides lots of protein and a great taste and instead of topping it with chipotle crema I have created my own version using greek yogurt making it healthier and adding even more protein.

While I was preparing the tacos I had a couple of spoon fulls of the tuna straight out of the can and it has a great taste and a wonderful texture.  We travel a lot and we have lots of road trips planned for this summer and the Bumble Bee® Prime Fillet® Gourmet Flavors are perfect for picnics and road trips weather eaten by itself, as part of a salad, in a sandwich or wrapped in a tortilla!
