Spicy Mango BBQ Ribs

mango BBQ ribs recipeSummer is almost here and we’re already firing up our grill at home and cooking many of our meals outdoors. I love grilling and now that the kids will soon be out of school I really enjoy cooking outside while I watch them play.  On the weekends we usually get together with my parents and we are always looking of new recipes to cook on the grill.  Ribs are one of my favorite foods, as you know I am a complete carnivore and who can resist a delicious rack of BBQ ribs.

mango BBQ ribs recipeWe will be having a get together with family and friends who will be in town visiting and I wanted to make something special and different so I combined two of my favorite foods, ribs and mango to create a delicious mango BBQ sauce that will have everyone licking their fingers and asking for seconds.

Spicy Mango BBQ Ribs

Ingredients

  • Smithfield® Spare Ribs
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1/2 teaspoon  chipotle powder
  • salt and pepper to taste
  • 1 medium-size mango flesh removed
  • 2 tablespoons olive oil
  • 1 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1 cup ketchup
  • 1 tablespoon Dijon-style mustard
  • 2 tablespoons agave
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon chipotle
  • 1 tablespoon lime juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Place the mango in a food processor, and puree until smooth.
  2. Add the rest of the ingredients and pulse until well combined.
  3. Transfer ingredients to saucepan and bring to a simmer. Cook for 5 minutes. Remove and let cool.
  4. Preheat a gas grill for high heat, or arrange charcoal briquettes on one side of the barbeque. Lightly oil the grate.
  5. In a small jar, combine cumin, chipotle powder, paprika, salt, and pepper. Close the lid, and shake to mix.
  6. Trim the membrane sheath from the back of each rack. Run a small, sharp knife between the membrane and each rib, and snip off the membrane as much as possible. Sprinkle as much of the rub onto both sides of the ribs as desired. To prevent the ribs from becoming too dark and spicy, do not thoroughly rub the spices into the ribs. Store the unused portion of the spice mix for future use.
  7. Place aluminum foil on lower rack to capture drippings and prevent flare-ups. Lay the ribs on the top rack of the grill (away from the coals, if you're using briquettes). Reduce gas heat to low, close lid, and leave undisturbed for 1 hour. Do not lift the lid at all.
  8. Brush ribs with barbecue sauce, and grill an additional 5 minutes. Serve ribs as whole rack, or cut between each rib bone and pile individually on a platter.

A huge part of getting amazing ribs is buying the right ribs and I always look for Smithfield® ribs when I am shopping for groceries at my local Walmart. If I say so myself these ribs came out amazing, the spicy mango BBQ sauce is a great combination of tropical flavors that remind me of my childhood back in Guatemala where I loved to eat fresh mangos.  The chipotle gives this recipe a smoky flavor and just enough kick.  The best part is that my parents have mango trees in their back yard so for this recipe I used fresh mangoes that we picked right from their back yard! mango BBQ ribs recipe

  2. The instructions say to put the mango in a food processor and puree.
    Then add remaining ingredients and pulse.
    Which ingredients are to be added? all? Some?
    Where do the rub ingredients come from? The ingredient list? Additional to the list? Not in “remaining ingredients”?
    Are some ingredients for the sauce and some for the rub? You do not specify.
    Pease clarify what otherwise looks like a good recipe?
