I’ve always loved chicken salad but most recipes are loaded with calories so I set out to create my own skinny version which is easier to make and has a lot less calories than a regular chicken salad. I substituted the mayo for a combination of greek yogurt and fat free mayonnaise and used Oscar Mayer Selects Natural Smoked Turkey cold cuts instead of chicken which added flavor and cut preparation time in half! I gave the recipe a personal touch and lots of flavor by adding fresh mango and a dash of tajín seasoning.  I served the salad in ripe Hass avocados for the ultimate wholesome lunch!

Skinny Turkey and Mango Salad Stuffed Avocados

Ingredients
  • 1 package of Oscar Mayer Selects Natural Applewood Smoked Turkey
  • 4 Hass avocados cut in half, seed removed
  • ½ cup plain, nonfat Greek yogurt
  • ¼ cup light mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 cup mango cut into small cubes
  • ½ cup celery, diced (about 3 stalks)
  • ¼ cup diced red onion
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tablespoon of tajín seasoning or substitute tajín for ¼ tablespoon dried chipotle, ¼ tablespoon of salt and 1 tablespoon of lime juice
Instructions
  1. Dice the Oscar Mayer Selects Natural Applewood Smoked Turkey into.
  2. In a bowl mix the Greek yogurt, light mayonnaise and apple cider vinegar until well combined.
  3. Season with salt and pepper.
  4. Add the mango, celery and red onion and fold into the turkey salad.
  5. Cut the avocados in half and remove the seed.
  6. Place two tablespoons of turkey mango salad on each half of the avocado.
  7. Top with fresh cilantro and tajín seasoning.

The combination of flavors and textures in this recipe is great and I know this will become a new favorite.  This salad is also a great option for picnics and road trips as it is easy to store and makes some killer sandwiches!
