Being Lactose Intolerant is no fun.  The belly upset and generally “icky” feeling; you’ll do anything to avoid it.  Unfortunately, when you are a child the fun foods and everyday snacks usually consist of some lactose rich product.  Cheese, ice cream, milk in your cereal…forget about it!  Both of my children are lactose intolerant and we have looked for ways to let them still enjoy other, typical, kids foods while making sure they don’t suffer the consequences of ingesting lactose products.

That’s why Silk has always been a huge part of our lives, ever since the kids were little.  Silk is a dairy free,milk alternative. Don’t let that fool you, it is delicious and a real treat.  We also love Silk because it is not only free of dairy and lactose but  gluten, casein and carrageenan, artificial colors, flavors or any other “funny business” ,as well.

I, of course, have created a recipe that pairs perfectly with the new Silk Nutchello flavors. I will be making chia and berry pudding for the family

Chia and Berry Pudding Recipe

Ingredients

  • 4 tbsp chia seeds
  • 1 cups Silk vanilla almond milk
  • 1 tbsp honey
  • 1/2 cups fresh raspberries
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh blackberries
  • mint leaves

Instructions

  1. In a bowl, combine the chia seeds, honey and almond milk together and stir making sure that there are no clumps. Cover the bowl with plastic wrap and place in the refrigerator for 4-5 hours.
  2. Puree the berries in a food processor. Mix the pureed strawberry and chia pudding together. Serve chilled and top the pudding with fresh berries and mint leaves.

Silk Nutchello has come out with 3 new flavors; Toasted Coconut & Cashew (creamy cashew and toasted coconut flavor), Dark Chocolate & Walnut (roasted walnuts meets decadent dark chocolate,YUM!) and Caramel Almond & Cashew (toasted almonds, creamy cashews, rich caramel flavor) and we couldn’t wait to introduce the new, nut based, Silk Nutchello, line to the kids.  We weren’t surprised that they fell in love with 2 of the flavors right away, the Dark Chocolate Walnut and Caramel Almond Cashew.  They make a perfect 3 o’clock treat after school ,(best) poured over ice, with a banana according to the kids.  With around 90 calories and no saturated fat or cholesterol we can always feel good about letting our kids indulge a bit.
