These mini vegetables tostadas are a fun and nutritious after school snack that you can make in minutes!
I seriously can not believe that summer is almost over and my kids start school next week. Even though I feel like I’m not ready to give up waking up later and spending the days with the kids outside or traveling with the family I have to face it and get myself and my family ready for the new back to school routine.
When my kids come home from school I always prepare a snack for them and we all sit around the table talking about their day and what they did in school. It’s one of my favorite times of the day as we get to spend time together as a family and it reminds me of the meriendas with my family back home. The merienda is very big in Latinamerica: it’s a snack time where the whole family gathers around and takes a break to enjoy a light meal, some family time and usually some coffee too. This summer as we traveled in Europe I discovered that the Swedes enjoy having fika which means coffee time and is very similar to the merienda. The Swedes take a break with friends family to enjoy time together. Both the merienda and the fika are all about coming together around food to take a break during your busy day.
As I was thinking about fun, nutritious and good for you ideas to make for that after school snack (merienda) I though that it would be fun to create some mini vegetable tostadas. Of coarse I also wanted something that was easy to make so I decided to use Pace Salsa which gave these mini vegetable tostadas lots of flavor! I love that Pace salsa has that genuine South West flavor and because it’s made with handpicked vegetables I know that I am giving my kids something that is good for them.
To make these hearty and filling I added avocado and mushrooms. But the great thing about these mini tostadas is that you can add whatever vegetable you have on hand, maybe even some leftover chicken.
- 1 cup of Pace Mild Salsa
- 15 round tortilla chips
- 1 cup of fresh or canned mushrooms
- 1 Hass avocado
- 1 tablespoon of lime juice
- 1 can of sweet corn
- 1/2 a cup of Mexican crema
- 1/2 cup of Queso Fresco or Feta cheese
- 1/4 cup of fresh cilantro
- chives for garnish
- In a sauce pan stir fry the mushrooms seasoning them to your taste. I added some paprika, salt, pepper and dried garlic.
- Smash the avocado with a fork, add the lime juice and salt and pepper to taste.
- In a food processor combine the cream and cilantro. Pulse a few times until you have a smooth mixture.
- Spread some avocado on the toasts, top that with a tablespoon of Pace Salsa.
- Add a few mushrooms, drizzle with the cilantro cream and top with crumbled Queso Fresco.
- Garnish with fresh chives or cilantro.
I have to say that these vegetable tostadas came out great and the kids loved them. For an adult version of these, which make wonderful appetizers for a tailgating or football party you can use the hot Pace Salsa instead of the mild salsa to give them a little kick.
I paired the tostadas with orange pineapple V8+Energy drinks. The V8+Energy drinks are a nutritious option that combines a serving of fruit and vegetables but tastes like fruit. Additionally it provides natural energy from green tea which acts as the the perfect natural energy boost we all need in the afternoon and it won’t cause a crash later.
