Healthy Eggnog Cranberry Pancakes

eggnog cranberry pancakesI love cranberry and enjoy it throughout the season. After Thanksgiving when there are lots of leftovers that we need to use I love to make some cranberry pancakes with the leftover home made cranberry sauce. This year I wanted to try something new so I decided to add eggnog as well. Eggnog and cranberry have become one of my favorite combinations for this holiday season and I just keep using these two traditional holiday flavors together to make all sorts of delicious treats.

I really liked how these turned out and the kids loved them too. The tartness and slight bitterness of the cranberries really compliments and balances off the sweetness of the eggnog so that the pancakes are full of flavor but are not too sweet. You can top these with light whipped cream and some additional cranberry sauce.

healthy eggnog cranberry pancakesI used the leftover cranberry sauce from Thanksgiving for these as we made them for breakfast the next day. You can find my recipe for cranberry sauce HERE. If you want to make a healthier version of the cranberry sauce simply substitute the sugar for stevia.  I use stevia because it’s the only sweetener that I have found that does not have an after taste and most importantly it’s all natural and you can replace sugar for stevia using the exact same quantities.

In this recipe I used Silk nog, made from soy milk, because it has about half the calories of regular eggnog and is also has less fat but you can substitute Silk nog for a light eggnog or make your own skinny eggnog.

Healthy Eggnog Cranberry Pancakes

Ingredients

  • 2 cups white whole wheat flour
  • 4 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1   tsp cinnamon
  • 2 tsp stevia
  • 1 tsp nutmeg
  • 4 egg whites
  • 2 cups Silk Nog
  • 1 tsp vanilla extract
  • 1/4 cup home made whole berry cranberry sauce
  • cooking spray

Instructions

  1. Mix Silk nog, egg whites and vanilla extract in a bowl.
  2. Mix flour, baking powder, stevia, salt, cinnamon and nutmeg in another bowl.
  3. Beat wet mix into dry mix roughly, so as to add more air to mix.
  4. Add cranberry sauce and fold into mixture.
  5. Spray non-stick olive oil onto griddle or skillet and preheat.
  6. Pour batter onto hot griddle.
  7. When pancake bubbles around edges and towards center turn.
  8. Pancakes are done when golden brown.
  9. Serve hot and drizzle with maple syrup, honey or dulce de leche.
  10. Top with whipped cream and garnish with chopped pecans

  1. What a great protein meal – and you could make it even more so by replacing 1/2 the flour with soy protein, which is what my brother the weight lifter would do!
