Cookie Sandwiches with Peanut Butter and Avocado Chocolate Frosting

When I think of cookies I think of special moments in my childhood, of sitting with a glass of milk to enjoy those home made sweet treats.  So when I had the opportunity to review Mrs. Fields cookies I was really excited as Mrs.Fields cookies has a long history of sharing their homemade goodness.  Soft-baked and snack size, Mrs.Fields Nibblers® taste just like those home made cookies I remember from my childhood. And now for the first time, you can find delicious flavors like Milk Chocolate Chip, Peanut Butter, and Double Chocolate Fudge in a grocery store near you.

Although we are pretty lucky and both my husband and I work from home we work really long hours and during the week we have little time to spend together as a family.  On weekends we disconnect (as much as possible!) and fill the days with fun activities or trips.  We try to turn each weekend into a special family celebration be it by taking a fun trip to the beach or explore Florida or by creating special moments at home.  When we go out on family trips Mrs. Fields nibblers are the perfect sack to bring along be it as a snack during a long trip or as the perfect sweet treat at a picnic on the park.

This past weekend we decided to create a super fun snack to celebrate Spring.  We started off with Mrs. Fields chocolate chip chocolate dipped nibblers, then followed with the peanut butter chip cookies and the double chocolate fudge, which where my favorite.  We created mini cookie sandwiches and to add a bit of a twist and make them more fun we made Peanut Butter & Avocado Chocolate Frosting which we used for the filling.  We also had some vanilla frosting in the house so we made some mini cookie sandwiches with the vanilla frosting too but the chocolate ones where so much better and there was the added nutrition provided by the avocado.

Peanut Butter and Avocado Chocolate Frosting

Ingredients

  • 1 medium ripe avocado
  • 1/4 cup agave
  • 3 tablespoons creamy natural peanut butter
  • 1 tablespoon coconut oil melt over hot water bath
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. In the bowl of a food processor, combine the avocado, agave, peanut butter and coconut oil and blend until smooth, scraping down the sides as necessary.
  2. Make sure the mixture is completely smooth and all avocado chunks are blended.
  3. Add in vanilla and cocoa powder and blend until well combined.
  4. To assemble just place one tablespoon of frosting in between two cookies of your choice and enjoy!

We also made some cookie sandwiches using store brought vanilla frosting which we already had at home and my kids loves both of the cookie sandwiches. It was such a fun way to eat the cookies which we accompanied with some milk and these sandwich cookies would be ideal for a party snack.

  1. We love chocolate chips cookies and I usually bake at home. I never thought that you can make cookie sandwich this way. I have never tried but I love avocado and peanut butter. Something to try this weekend. I will also see if we have that brand of cookies in the store.
