Tropical Fruit Cilantro Lemonade Popsicles

Mandarine Sunshine Cilantro Lemonade Popsicles

Summers in Florida can be brutal: the sweltering heat combined with the humidity that can make it hard to sometimes to spend as much time as we would like outdoors.  But Florida also has so much to do and is so much fun in the summer and we love going to the beach, having picnics and cooking outdoors.  To keep us hydrated and cool we love making paletas, or popsicles.

Back home one of my favorite parts of the summer was enjoying delicious fruit paletas. We make paletas at home all the time and this summer I wanted to try something new and adventurous so I decided to incorporate some new ingredients to our paletas.  We started off using the a package of Dole frozen fruits, there are so many varieties to choose from but of this recipe I used the Tropical Medley that has strawberries and pineapple. This was the perfect combination of sweet and tart flavors for the recipe I had in mind.

I really feel there is nothing more refreshing than lemonade so I combined my love of lemonade and paletas to create an ideal cooling treat. I started making lemonade, then I added the fruits and finished it off with fresh cilantro for an even more refreshing flavor.

Mandarin Sunshine Cilantro Lemonade Popsicle

Ingredients

  • 1-1/2 cups lemon juice
  • 1-3/4 cups sugar
  • 1 bag of Dole Tropical Medley
  • 3/4 cup fresh cilantro leaves
  • 2 quarts cold water

Instructions

  1. Mix lemon juice, water and sugar and cilantro.
  2. Add frozen fruit.
  3. Put the mixture into popsicle mold.
  4. Put the lid on the mold and insert sticks.
  5. Freeze for at least 6 hours.
  6. To unmold place molds water warm water (not hot) for 20-30 seconds and the popsicles will slide right off.

I’m not certain whether it’s the pretty pink color or lip-puckering tartness that made these popsicles such a hit. The combination of the tart and citrus flavors with the sweetness of the strawberries plus the freshness of the cilantro really makes this the ideal cool treat for the summer months.

Because I used the Dole Frozen Fruit, I did not have to worry about any mess: there was no cutting, washing, or peeling required. I just opened the bag and added the fruit and when I was done I just popped  the re-sealable stay-fresh pouch back in the freezer.

We have a few bags of Dole frozen fruits in the freezer all the time because they are so convenient. They are ideal for making paletas, smoothies or just putting fresh fruit as a topping on desserts and ice cream.
