My daughter wants to be a chef when she grows up and I am amazed at how cooking motivates her to do things that are really hard for her. As many of you know Ariane has autism and a motor processing disorder that makes doing simple things like opening a jar or pouring herself some milk in a glass really challenging. But when it comes to cooking she works past her frustration and we help her out by finding accommodations and different and simpler ways for her to do things in the kitchen. We cook together every weekend and sometimes we even invite the grandparents to come over and try her recipes.

This weekend I wanted to teach her how to cook one of my favorite Guatemalan desserts growing up: arroz con leche. This popular  dessert is very versatile and you can add many different ingredients. Because apples are one of her favorite fruits I though that making a caramel apple arroz on leche was would be the ideal recipe as it turns the traditional arroz con leche into the perfect fall dessert.

Cooking has become a weekend family tradition that not only brings us together but it’s also a great opportunity to connect the kids with their Latino culture through the food we cook together. For us teaching Ariane to cook is also very important because we need to find ways to make things easier for her in the kitchen so that we ensure that she will be able to cook independently, we have also found that because cooking is something that she loves to do it motivates her to try new things and makes her work harder to accomplish tasks that are difficult for her.

  2. For longer storage, transfer the rice pudding to the freezer. It can be stored in the freezer for up to 3 months.

Can You Freeze Rice Pudding or Arroz con Leche?

One of the great things about rice pudding is that it can be easily prepared in advance and stored for later enjoyment. Here’s a guide on how to properly freeze and store your caramel apple arroz con leche:

Freezing Arroz con Leche:

  1. Allow the rice pudding to cool completely before freezing. Divide it into individual portions or store it in a larger airtight container.
  2. Seal the containers tightly to prevent air from entering, which can cause freezer burn.

Ingredients:

  • 1 cup of long grain rice
  • 1 cinnamon stick
  • 4 cups of water
  • 2 apples, cored and diced
  • 2 tablespoons of butter
  • 1/4 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 3 cups of whole milk
  • 1 can of condensed milk
  • 1 teaspoon of vanilla extract
  • Caramel, for drizzling
  • Whipped cream, for topping

Caramel Apple Arroz Con Leche

Instructions:

  1. In a saucepan, combine the rice, cinnamon stick, and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the water is absorbed.
  2. While the rice is cooking, preheat the oven to 375°F (190°C). In a separate baking dish, place the diced apples and dot them with butter. Sprinkle the brown sugar and cinnamon over the apples. Bake for 15-20 minutes or until the apples are tender and slightly caramelized.
  3. Once the rice is cooked, remove the cinnamon stick and stir in the whole milk, condensed milk, and vanilla extract. Cook over low heat, stirring frequently, until the mixture thickens and reaches a creamy consistency, about 15-20 minutes.
  4. To assemble, spoon the caramelized apples over the creamy rice pudding. Add a dollop of whipped cream and drizzle with caramel .
  5. Serve the caramel apple arroz con leche warm or chilled, according to your preference. The combination of caramel, tender baked apples, and creamy rice pudding creates a harmonious blend of flavors and textures that will satisfy your autumn dessert cravings.
