Ese sabor a pepita tostada mezclada con agua fr\u00eda y dulce, servido en un vaso lleno de hielo. Sencillo, chap\u00edn, y riqu\u00edsimo. Despu\u00e9s de tanto tiempo viviendo fuera de Guate, preparar recetas como esta es una de las formas m\u00e1s f\u00e1ciles que tengo de sentirme cerca de mi tierra. Cuando estamos lejos los sabores de nuestra tierrra son los que m\u00e1s extra\u00f1amos. Ya sea que vivas fuera o estes en Guate esta receta de fresco de pepita es f\u00e1cil de hacer en casa.<\/p>\n<h2 class=\"text-text-100 mt-3 -mb-1 text-[1.125rem] font-bold\"><span class=\"ez-toc-section\" id=\"%C2%BFQue_es_el_Fresco_de_Pepita\"><\/span><strong>\u00bfQu\u00e9 es el Fresco de Pepita?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">El fresco de pepita \u2014 o fresco de pepita de ayote, como tambi\u00e9n se le dice \u2014 es una bebida t\u00edpica que se hace tostando las semillas del ayote, licu\u00e1ndolas muy bien, y mezcl\u00e1ndolas con agua endulzada y hielo. No es la pepitoria chiquita que se usa en el pepi\u00e1n \u2014 aunque son parientes \u2014 sino la semilla grande y plana que sale del ayote. Esa que siempre ha estado en la cocina guatemalteca: en recados, en salsas, encima de la fruta con chile y sal en los puestos del mercado. La misma que las abuelitas guardaban y secaban para no desperdiciarla. Pues esa misma pepita, tostada y licuada con agua y az\u00facar, se convierte en una de las bebidas m\u00e1s ricas que hay para los d\u00edas de calor.<\/p>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">Hay familias que le agregan canela al licuarla, otras le ponen un poco de leche para que quede m\u00e1s sustanciosa, y hay quienes usan arroz tostado para darle m\u00e1s cuerpo. Todas esas variaciones quedan bien. Al final es cuesti\u00f3n de gusto.<\/p>\n<h2 class=\"text-text-100 mt-3 -mb-1 text-[1.125rem] font-bold\"><span class=\"ez-toc-section\" id=\"%C2%BFA_Que_Sabe_el_Fresco_de_Pepita\"><\/span><strong>\u00bfA Qu\u00e9 Sabe el Fresco de Pepita?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">Principalmente a pepita tostada. Tiene ese sabor caracter\u00edstico de semilla doradita, ligeramente terroso, con un dulce suave que no empalaga para nada. No es un fresco aguado ni tampoco espeso \u2014 es refrescante pero con car\u00e1cter.<\/p>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">Si le pones canela al licuarla, el sabor se vuelve m\u00e1s redondo y arom\u00e1tico. Queda muy bien as\u00ed. Y si lo sirves con el borde del vaso cubierto de pepita molida con canela y taj\u00edn, y una rodajita de naranja encima tambi\u00e9n con taj\u00edn, la combinaci\u00f3n es de otro nivel. El ayote era uno de los cultivos base de los mayas \u2014 junto con el ma\u00edz y el frijol \u2014 y sus semillas se usaban en comidas, en ceremonias y en bebidas. La pepita incluso aparece mencionada en el Popol Vuh como parte de los alimentos que se ofrec\u00edan en momentos importantes. Eso dice mucho sobre el valor que nuestros antepasados le daban a estas semillas.<\/p>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">La tradici\u00f3n de moler semillas y mezclarlas con agua para hacer bebidas es de las m\u00e1s antiguas que tenemos en Guatemala. El tiste, el atol, los diferentes pinoles \u2014 todos vienen de esa misma costumbre de aprovechar lo que la tierra da. El fresco de pepita entra en esa misma historia.<\/p>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">El Ministerio de Cultura de Guatemala tiene documentada esta bebida en el Sistema de Informaci\u00f3n Cultural como bebida tradicional y representativa de Zacapa y Chiquimula. La receta fue recopilada por Yolanda Estela Hern\u00e1ndez Sol\u00f3rzano, y es la base de lo que preparamos aqu\u00ed.<\/p>\n<h2 class=\"text-text-100 mt-3 -mb-1 text-[1.125rem] font-bold\"><span class=\"ez-toc-section\" id=\"%C2%BFDonde_se_Toma_Mas_el_Fresco_de_Pepita_en_Guatemala\"><\/span><strong>\u00bfD\u00f3nde se Toma M\u00e1s el Fresco de Pepita en Guatemala?<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">En Zacapa y Chiquimula, sin duda. All\u00e1 es donde este fresco tiene m\u00e1s ra\u00edz \u2014 en los mercados, en las casas, en las fiestas patronales. Es el tipo de bebida que la gente del oriente ha preparado de toda la vida, de generaci\u00f3n en generaci\u00f3n, sin pensarlo mucho porque siempre ha estado ah\u00ed.<\/p>\n<p class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\">Y tiene mucho sentido, porque esos departamentos tienen un calor que no es poca cosa. Si est\u00e1s fuera de Guate, b\u00fascala en tiendas latinas \u2014 es la semilla plana y un poco verdosa del ayote, diferente a la pepitoria peque\u00f1a.
