Preheat oven to 350 °.

Slice ⅓ of the pepper off lengthwise.

Clean and seed them.

Season chicken breasts with salt and pepper.

Place the chicken in the crockpot.

Combine the orange juice, lime juice, chipotle , garlic and achiote in a blender and or food processor and blend until smooth.

Pour the achiote sauce over the chicken.

Cook on low for 4 hours until the chicken is tender.

Shred the chicken using two forks
