Avocado And Chorizo Egg Salad Lettuce Wraps

Ingredients

  • 6 eggs hard boiled
  • 1 ripe Avocado From Mexico peeled and mashed
  • ¼ cup low fat yogurt
  • 1 tablespoon fresh lime juice
  • 2 tsp chopped fresh chives
  • ¼ sweet red yellow and orange peppers, chopped
  • ¼ cup red onion finely chopped
  • ½ teaspoon fine sea salt
  • ¼ teaspoon pepper
  • ½ cup chorizo crumbled (optional)
  • Romaine lettuce leaves
  • Fresh cilantro optional

Instructions

  1. Chop the hard boiled eggs.
  2. Combine all ingredients at the same time, mix gently until well combined.
  3. Serve the egg salad in the Romaine lettuce leaves.
  4. To give it a great presentation save some of the chorizo, cilantro, chives and sweet bell peppers to sprinkle on top of your egg salad salad.
