Healthy Mango Pancakes

Ingredients

  • 1/2 cup almond milk
  • 1 cup of diced mango fresh or frozen
  • 1 tsp vanilla
  • 3/4 cup plain flour
  • 2 tsp baking powder
  • 2 tablespoons of shredded coconut
  • 1 tablespoons light brown sugar
  • Pinch of salt

Instructions

  1. Combine the milk, mango and vanilla in a blender or food processor and blend until well incorporated.
  2. In a large bowl combine the flour, baking powder, coconut, sugar and salt.
  3. Pour the mango mixture into the dry ingredients and mix until well combined.
  4. Pour about 1/4 cup batter onto a hot nonstick griddle or nonstick skillet
  5. Cook about 2 minutes or until bubbles form and burst on the surface and the top of the pancakes look set.
  6. Flip pancake and cook for another 2-3 minutes until cooked through.
  7. Top with more fresh mango and shredded coconut.
  8. Drizzle with honey.
