Preheat oven to 375 degrees F.

In a large bowl, combine the eggs, sour cream, a pinch of salt, and pepper. Whisk until fairly smooth.

Fold in cheese, black beans, cilantro, tomato and chipotle adobo sauce.

Lightly coat muffin pan with nonstick cooking spray.

Fit 2 slices of ham into each muffin cup.

Spoon scrambled egg mixture into the cups.

Bake for approximately 15 minutes.

Sprinkle additional shredded cheese and let stand for one minute.

Run a knife around the edges of the ham cups and remove from muffin pan.

Serve with a dolup of sour cream and sprinkle scallions or green onions.
