Spicy Elotes Mexicanos

  • 4 ears of  corn
  • 2 tablespoons butter melted
  • 2 tablespoon mayonnaise
  • 2 tablespoons of Mexican crema
  • 4 tablespoons cotija cheese
  • dried ground chipotle or piquín chile
  • 1 tablespoon chopped cilantro
  • 1 lime wedge


  1. Grill corn until lightly charred and remove from grill.
  2. Brush melted butter on corn.
  3. Mix mayonnaise and Mexican crema and spread mixture over corn.
  4. Top with crumbled cotija cheese, fresh chopped cilantro
  5. Sprinkle with salt, ground chile, and lime juice to taste.
