Fun Back To School Snack: Mini Vegetable Tostadas Recips

Ingredients

  • 1 cup of Pace Mild Salsa
  • 15 round tortilla chips
  • 1 cup of fresh or canned mushrooms
  • 1 Hass avocado
  • 1 tablespoon of lime juice
  • 1 can of sweet corn
  • 1/2 a cup of Mexican crema
  • 1/2 cup of Queso Fresco or Feta cheese
  • 1/4 cup of fresh cilantro
  • chives for garnish

Instructions

  1. In a sauce pan stir fry the mushrooms seasoning them to your taste. I added some paprika, salt, pepper and dried garlic. 
  2. Smash the avocado with a fork, add the lime juice and salt and pepper to taste. 
  3. In a food processor combine the cream and cilantro. Pulse a few times until you have a smooth  mixture.
  4. Spread some avocado on the toasts, top that with a tablespoon of Pace Salsa.
  5. Add a few mushrooms, drizzle with the cilantro cream and top with crumbled Queso Fresco. 
  6. Garnish with fresh chives or cilantro.
