Cereal Cups With Chia Mango Pudding

  • *Ingredients for the cups
  • 4 Tbsp Coconut Oil
  • 1/4 Cup Honey
  • 1/4 Cup Unsweetenedd Apple Sauce
  • 2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 2 ½ Cups Honey Bunches of Oats Honey Roasted
  • 1/3 Cup Shredded Coconut

  • 4 tbsp chia seeds
  • 1 cups vanilla almond milk
  • 2 tbsps of honey
  • ½ cup mango puree
  • mint leaves

  • Instructions


  1. 1. To a small sauce pan, add the coconut oil, honey, cinnamon, and salt.
  2. 2. Heat until all ingredients are combined. Remove from heat and stir in the apple sauce and vanilla.
  3. 3. In a separate bowl mix together the oats and coconut.
  4. 4. Pour the liquid over the dry ingredients and stir until completely coated.
  5. 5. Place the mixture into the fridge for about 30 minutes to cool.
  6. 6. Apply cooking spray to muffin cups.

  8. 7. Preheat the oven to 325 degrees.
  9. 8. Place about two tablespoons of the cereal mixture into each muffin cup. Using your fingers press into the center of the hole and then work your way around the edges to form a bowl.
  10. 9. Place the bowls muffin tins with the cereal cups in the oven and cook for 15-20 minutes, or until they start to harden.
  11. 10. Let cool completely before removing.

  13. 11. In a bowl, combine the chia seeds, honey and almond milk together and stir making sure that there are no clumps.
  14. 12. Cover the bowl with plastic wrap and place in the refrigerator for 4-5 hours.
  15. 13. Mix the pureed mango and chia pudding together.
  16. 14. Serve chilled and top the pudding with fresh berries and mint leaves.
