These easy to make granola cups filled with delicious chia mango pudding and topped with fresh fruit make for a fun and nutritious breakfast or afternoon snack.
My kids have both been waiting for the SING, it looks like so much fun and our whole family is a fan of singing competitions so we know that this movie will be something we all love. At home we always have Honey Bunches of Oats Honey Roasted cereal, because it’s one of our favorites and that is why we where excited to find the new specially marked boxes of Post cereal with the SING Movie sweepstake!
My daughter really likes to help out in the kitchen so this weekend we decided to make a special breakfast using the Honey Bunches of Oats Honey Roasted cereal. We made delicious Honey Bunches of Oats cereal cups and filled them with mango pudding and topped them with fresh fruit. These came out delicious and would also make a great after movie snack!
Cereal Cups With Chia Mango Pudding Recipe
Ingredients for the cups
- 4 Tbsp Coconut Oil
- 1/4 Cup Honey
- 1/4 Cup Unsweetenedd Apple Sauce
- 2 tsp Cinnamon
- 1/4 tsp Salt
- 1 tsp Vanilla Extract
- 2 ½ Cups Honey Bunches of Oats Honey Roasted
- 1/3 Cup Shredded Coconut
Ingredients for the pudding
- 4 tbsp chia seeds
- 1 cups vanilla almond milk
- 2 tbsps of honey
- ½ cup mango puree
- mint leaves
Instructions
1. To a small sauce pan, add the coconut oil, honey, cinnamon, and salt.
2. Heat until all ingredients are combined. Remove from heat and stir in the apple sauce and vanilla.
3. In a separate bowl mix together the oats and coconut.
4. Pour the liquid over the dry ingredients and stir until completely coated.
5. Place the mixture into the fridge for about 30 minutes to cool.
6. Apply cooking spray to muffin cups.
7. Preheat the oven to 325 degrees.
8. Place about two tablespoons of the cereal mixture into each muffin cup. Using your fingers press into the center of the hole and then work your way around the edges to form a bowl.
9. Place the bowls muffin tins with the cereal cups in the oven and cook for 15-20 minutes, or until they start to harden.
10. Let cool completely before removing.
11. In a bowl, combine the chia seeds, honey and almond milk together and stir making sure that there are no clumps.
12. Cover the bowl with plastic wrap and place in the refrigerator for 4-5 hours.
13. Mix the pureed mango and chia pudding together.
14. Serve chilled and top the pudding with fresh berries and mint leaves.
These pudding cups are not only easy to make and delicious but they are also nutritious and make for a healthy breakfast or snack. The crunchy cereal cups are a great contrast to the soft pudding and you can fill these with your favorite fruits and different flavored puddings.
We chose mango pudding because this reminds me of the pudín de mango my abuela used to make. I did give it a bit of a healthy makeover by making it with chia seeds though but biting into these pudding and fruit cereal cups brought back so many memories of sitting around the table enjoying la merienda (or afternoon snack) with my family.

Que ricas se ven esas copitas hechas con cereal, ya me imagino la rica combinación con el pudín. Me gustan para desayuno o postres.
