Chipotle Chicken Tostadas

You have eaten Enchiladas before and if you have they were probably the Mexican version.  In my home country of Guatemala we also have a traditional dish called enchiladas but they are very different from the Mexican version. For Guatemalan enchiladas you start off with a fried corn tortilla or “tostada” and top that with lettuce, a pickled vegetable mix, ground beef, red tomato sauce and garnish it with crumbled queso fresco.

Inspired by this traditional dish from my childhood I decided to make my own version of enchiladas using the tostadas as the base but topping the fried tortillas with a spicy version of Hamburger Helper® Crunchy Taco as well as some fresh ingredients including tomato, avocado, cilantro and queso fresco.

Chipotle Chicken Tostadas With Avocado

Ingredients

  • 1 box of Hamburger Helper® Crunchy Taco
  • 1 pound of chicken breasts cut into cubes
  • 2 cups of hot water
  • 1 1/3 cup of milk
  • 1 tablespoon of butter
  • 2 Hass avocados cut into cubes
  • 1 cup ripe tomato cut into cubes
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup crumbled queso fresco
  • 2 teaspoon chipotles in adobo sauce
  • 6 lettuce leaves
  • 1 tablespoon of lime juice
  • 6 to stadas fried corn tortillas

Instructions

  1. Prepare the Hamburger Helper® Crunchy Taco according to instructions using the chicken, water, milk and butter.
  2. Add the chipotles in adobo to the Hamburger Helper® and mix well.
  3. Mix the tomato, avocado and lime juice in a bowl and add salt and pepper to taste.
  4. Place a lettuce leaf on each tostada.
  5. Spoon the Hamburger Helper® Crunchy Taco mix onto the tostadas.
  6. Spoon some tomato and avocado mix.
  7. Top with the fresh cilantro and the queso fresco.

Traditional enchiladas can be a very time consuming dish to make as making the picked vegetables takes some time, between chopping all the vegetables and preparing the pickled mix.  My version of this dish combines the crunchy tostada with our favorite Hamburger Helper® and gives it a fresh twist using traditional Latino ingredients to create a recipe that is reminiscent of those enchiladas I had back home but also blends it with some american flavors. I love that this recipe is so easy to create and so much fun to eat. Who doesn’t love eating a meal on a crunchy tortilla tostada?
