This refreshing Latino salad is easy to make and perfect for summer with a surprising combination of flavors.
Even though the kids started school last week we are still in summer mode and trying to take advantage of the everything that comes along with it from summer family outings to fresh summer salads. This weekend we enjoyed a family picnic at the beach and as I was looking for the perfect summer picnic recipes I got inspiration from a Mexican street food: fruit with chile.
In Mexico you will find fruit vendors selling fresh mango, watermelon and other fruits in small plastic bags. They cut the fruit right in front of you and just add lime and chile, usually Tajín.
Tan, which can be found in Latino markets and in the Hispanic section of many grocery stores is a combination of spicy chiles, salt and other spices. If you have not tried fruit sprinkled with Tajín you don’t know what you are missing!
Nothing screams summer like fresh watermelon and this watermelon and queso fresco salad is easy to make. The combination of the refreshing and sweet watermelon with the tanginess of the lime, the creamy queso fresco and the heat from the Tajín all come together for a surprisingly delicious explosion of flavors.

Spicy Queso Watermelon And Queso Fresco Salad
Ingredients
- 3 cups of watermelon cubed
- 1/2 cup of queso fresco crumbled
- juice of one lime
- 1 tablespoon of chile seasoning like Tajín
- fresh mint
Instructions

In a bowl combine the watermelon and lime juice and mix.

Add the crumbled queso fresco and mint.

Sprinkle with Tajín chile seasoning.
Place the spicy watermelon and queso fresco salad in individual mason jars and it ideal to take on a picnic or on a road trip.
