I have always been believed in having breakfast anytime, especially when it comes to cereal. Yet my husband takes this to another level, for him a bowl of cereal as an afternoon snack or for dinner is the ultimate comfort food. On my last trip to my neighborhood Walmart I was thrilled to find new Post Shredded Wheat Cereal so I got the Shredded Wheat Frosted Cinnamon Roll and Shredded Wheat Frosted Mixed Berry and thought I would surprise him with a special cereal treat.
I decided to create an easy carrot, zucchini & cherry bread using the Post Shredded Wheat Frosted Cinnamon Roll cereal which added more fiber and a delicious cinnamon taste. I used a carrot cake mix I had at home and just added a couple more ingredients and the result was delicious. This is such an easy recipe that is perfect for enjoying at breakfast, lunch or dinner.
5 Ingredient Carrot and Zucchini Bread With Cherries
Ingredients
- 1 box of carrot cake mix
- 3/4 cup Post Shredded Frosted Cinnamon Roll cereal, crumbled
- 3 eggs
- 1 cup unpeeled, grated zucchini
- 1 cup cherries, pitted and chopped
Instructions
1.Preheat oven to 350 degrees.
2.In large bowl combine the carrot cake mix, the shredded wheat and the eggs.
3.Beat with electric mixer on medium speed.
4.Fold in zucchini and cherries.
5.Add just a little water at a time if zucchini isn’t moist enough to get to a thick, bread consistency.
6.Pour into greased 9×5-in loaf pan.
7.Bake for 30 minutes or until knife comes out clean.
8.Cool in pan for 10 minutes on wire rack; remove from pan.
9.Cool completely.
10.You can add cream cheese frosting and top with chopped walnuts. I used store bought cream cheese frosting.
We are loving both of the new Post Shredded Wheat flavors! We were already huge Post Shredded Wheat fans and now we have more to choose from. We tried the Shredded Wheat Frosted Cinnamon Roll and Shredded Wheat Frosted Mixed Berry but we are also looking forward to trying the Shredded Wheat Frosted S’mores Bites as well. My favorite right now is the Shredded Wheat Cinnamon Roll flavor, covered in delicious cinnamon frosting and with a burst of vanilla flavor in the middle and combined with the milk it’s just like a cinnamon party in your mouth.
Now that this zucchini bread was such a success I know I will be using it to make other baked treats as well: I’m thinking cookies and pancakes to start with.

The cereal was a surprise ingredient. We have plenty of zucchini and cherries on hand since we grow both. Love the topping on the bread. Just have to buy the cereal.
I have seen a ton of zucchini bread recipes out there in the last couple weeks so I’m guessing zucchini might be in season LOL. This one looks especially delicious! That frosting on top has me drooling.

I have to be honest. I can’t bring myself to try zucchini bread because I don’t like zucchini. Does it really have a zucchini taste?? However, using cereal in the bread was super smart! Love the addition of carrots and cherries, too.
It doesn’t taste like zucchini at all! We make tons of it every summer. The kids hate zucchini so I make it while they’re at school and then tell them its applesauce bread..lol. The zucchini is actually about moisture..it is shredded then added juices and all. Zucchini totally disappears when it cooks. YOU ARE MISSING OUT ON A NUTRITIOUS SWEET BREAD BY NOT TRYING IT!!! Use a basic banana bread recipe to start with that has cinnamon in it. I promise you will love it..and the healthy benefits are just a great bonus!

I looked for some responses from someone who had actually used this recipe, but all of them said they plan to use it. It seems that the bread would be a little dry without any kind of oil in the recipe. I can understand leaving out the liquid since you have added zucchini and cherries, but where is the oil?
