As you probably know if you read the blog regularly, I lead a very active lifestyle: exercise and balanced nutrition are at the top of my list all year round. However, eating well can be really hard when you don’t have a lot of time. I am prepared to start the year off right by having easy to make and nutritious recipes on hand.
I love egg salad and it’s one of those things you can make ahead and just pull out of the refrigerator to eat for lunch or even dinner, it also makes a great snack. The problem with egg salad is the ton of calories that come along with using mayo. That is why I created this skinny recipe for delicious Avocado And Chorizo Egg Salad Lettuce Wraps. To make this more nutritious, I substituted the mayo for avocados and yogurt and gave it some sabor Latino by adding crumbled chorizo. The avocados really give this egg salad a fresh and delicious twist and they are so much better for you than the mayo.
Avocado And Chorizo Egg Salad Lettuce Wraps
Ingredients
- 6 eggs, hard boiled
- 1 ripe Hass avocado, peeled and mashed
- ¼ cup low fat yogurt
- 1 tablespoon fresh lime juice
- 2 tsp chopped fresh chives
- ¼ sweet red, yellow and orange peppers, chopped
- ¼ cup red onion, finely chopped
- ½ teaspoon fine sea salt
- ¼ teaspoon pepper
- ½ cup chorizo, crumbled (optional)
- Romaine lettuce leaves
- Fresh cilantro (optional)
Instructions
- Chop the hard boiled eggs.
- Combine all ingredients at the same time, mix gently until well combined.
- Serve the egg salad in the Romaine lettuce leaves.
- To give it a great presentation save some of the chorizo, cilantro, chives and sweet bell peppers to sprinkle on top of your egg salad salad.
The chorizo really gives this recipe a pop of flavor and brings everything together and the lettuce is not only a low calorie option to use instead of bread but it also adds a fresh element to this dish.
