Hazelnut Coffee Flan & Mexican Chocolate Spiced Latte With Coffee-Mate

I love experimenting with new flavors and new recipes. When I went to Walmart I was truly surprised by the variety of Coffee-Mate flavors. Coffee-Mate also offers fat free and sugar free creamers that will not only add flavor to your drink but also let you enjoy your favorite drinks or recipes without feeling guilty. I was able to save money using these coupons and with that motivation it was really hard to choose only two flavors.  You can see more about my shopping trip on my Google+ Album HERE.

I had not realized that I could use Coffee-Mate creamers to create dessert recipes and was surprised by all the delicious recipes on the Coffee-Mate website.  This really inspired me to come up with a recipe using Coffee-Mate creamers.  I picked the Fat Free Vanilla flavored and the Hazelnut to experiment with in my kitchen and the results, I have to admit, where quite delicious.

Hazelnut Coffee Flan

Flan is a traditional dessert that is enjoyed in many Latin American countries.  As a child growing up in Guatemala I remember my abuelita (grandma) giving us flan when we came to her house and I would usually not miss a chance to order it at a restaurant when I saw it in the menu. From coconut flans to orange flans, I love them all. My mom never cooked or showed me how to cook so I grew up feeling the kitchen was a place of wonder and mystery that only “the chosen” ones like my grandma could master.

Hazelnut Coffee Flan

Eventually I lost my fear of the kitchen, not before having quite a few disasters including almost burning my boyfriend’s kitchen when I was 25. Yes I am talking about actual flames coming out from the oven and me having to use a fire extinguisher. After that it couldn’t get worst so I decided the kitchen was my friend and started experimenting.

The first time I made flan was very special to me and since then I have tried adding new flavors and doing flan in different ways.  I recently purchased Hazelnut Flavor Nestlé Coffee-Mate Liquid Coffee Creamer for the first time, I have always loved hazelnut so I decided it would be the ideal starting point for a new flan recipe.  I added some coffee too and I have to say that the flan is delicious and the coffee and hazelnut flavors just complement each other perfectly.  My husband, who can not live without his daily fix of coffee had a hard time leaving some for the rest of us! 🙂

Ingredients

  • ½ cup sugar
  • 1 (9-onz) can sweetened condensed milk (approximately  1 cup)
  • 1/2 cups whole milk
  • 1 cup Hazelnut Flavor Nestlé Coffee-Mate Liquid Coffee Creamer
  • 1 egg and 4 yolks
  • 2 teaspoons instant-coffee granules dissolved in 3 teaspoons hot water
  • ½ teaspoon vanilla
  • 1/8 teaspoon salt

Preheat oven to 325 degrees.

Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until is browns and becomes caramel. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides. Reheat caramel if it starts to harden.

In a mixer or with a whisk, blend the eggs together. Mix in the milks and the Coffee-Mate then slowly mix in the 1/2 cup of sugar, then the coffee and the the vanilla. Blend smooth after each ingredient is added.

Pour custard into caramel lined ramekins. Fill a large glass or ceramic baking dish with 1 ½ inches of hot water, place ramekins inside and bake for approximately 1 hour in the water bath. Remove from oven when a knife inserted in center comes out clean.

IMG_6003Remove and let cool. Chill flan in refrigerator for at least 1 hour. To unmold flan, run a thin knife around edge of dish to loosen flan. Invert a large platter with a lip over dish. Holding dish and platter securely together, quickly invert and turn out flan onto platter. Caramel will pour out over and around flan.

Mexican Chocolate Spiced Latte

I love flavored coffee and my favorite coffee house drinks are the mocha latte and the vanilla latte.  Even though I enjoy having a coffee house drink a couple of times per week I had nor realized how much money I could be saving if I made them at home instead.  I went to the Coffee Mate website where I was able to calculate how much money I would be saving if I made these at home.  I was also thrilled to find money saving coupons for Coffee-Mate which made it even more affordable.  Not only that, but at home I have the flexibility to add whatever ingredients I want and make the recipe my own.  Using the Vanilla Flavor Fat Free Nestlé Coffee-Mate Coffee Creamer as an inspiration I came up with a version of the mocha latte that has more flavor and that also draws some inspiration from my Latino roots.  My Mexican Chocolate Spiced Latte was truly delicious. I used Mexican chocolate instead of regular chocolate and added some cinnamon and nutmeg to give it more flavor.

Now I can indulge on as many delicious coffee house drinks at home as I want to using Nestle Coffee-Mate and I do not feel guilty about the spending or about the calories either!IMG_5967

Ingredients

  • ¼ cup Mexican chocolate or two tablespoons  (can be substituted for 1 tablespoon of unsweetened cocoa)
  • 3 -4 teaspoons instant coffee
  • 1 teaspoon cinnamon
  • Vanilla Flavor Fat Free Nestlé Coffee-Mate Coffee Creamer
  • Whipped cream
  • 1 pinch nutmeg (optional)
  • 1 cinnamon stick

Preparation

Pour hot water on a coffee cup until it is about 2/3 full. Add instant coffee and the previously made 1/4 cup of Mexican Chocolate or 2 tablespoons of cocoa. Add 1 tablespoon of Vanilla Flavor Fat Free Nestle Coffee-Mate Coffee Creamer and cinnamon and mix well. Top with whipped cream and pinch of nutmeg. You can use a cinnamon stick for stirring or just for garnish. IMG_5995

Thanks for sharing! 😀 I love remembering/thinking of my relatives through special desserts/meals, too 🙂 your story made me laugh, but only because I can relate. I’ve only caught the kitchen on fire one time–then found out that I was pregnant, so I blame that for my goofiness ;D lol. I picked up a pot to drain the water and sat it down on an oven mitt (to keep from burning the counter) and it stuck the bottom… I didn’t know this… I put it back on the burner and flames, smoke, fire extinguisher. That’s a rush I never want to feel again.

    • Tiffany that is so funny. I was cooking at my boyfriend’s apartment…. a romantic dinner for an anniversary. He had been bugging me for months, maybe years to cook for him. I was using the stove and had some awesome shrimp almost ready to serve and I decided to turn on the oven to heat up some bread. I didn’t know that my boyfriend at the time used the oven to store his tupperware!! Of course I did not think to check and before the oven had reached the desired temperature there where flames and a thick black smoke coming from the oven. It was pretty scary! LOL! Not to mention the fact that the black smoke from the burning plastic left a huge black stain on his wall and there was a black film of soot on all of his living room furniture! 😀
