Thanksgiving is over and now you’re left with all of this food! But don’t despair! This delicious Thanksgiving leftover turkey casserole combines all of your favorite Thanksgiving flavors into one dish that’s not only delicious but also so easy to make.
I got the inspiration to create this delicious casserole from the ViveMejor website here. You can check the original recipe right here. The ViveMejor version of this Thanksgiving Leftover Turkey Casserole is cheesier but in this case, I decided to leave the cheese out since my stuffing was more of a sweet stuffing with apples and raisings.
This casserole came out so good! Once you bite into it you feel like it’s Thanksgiving all over again! I loved making this with my family and we all enjoyed it together and even invited a los abuelos to come on over for dinner.
INGREDIENTS
3 cups leftover prepared stuffing, divided
4 cups coarsely chopped leftover cooked turkey (about 1 lb.)
3/4 cup Hellmann’s® or Best Foods® Real Mayonnaise, divided
1/4 cup whole berry cranberry sauce
2 cups leftover mashed potatoes
1 cup shredded part-skim mozzarella cheese
DIRECTIONS
Preheat oven to 375°. Spray 8-in. baking dish with no-stick cooking spray. Spoon in 1-1/2 cups stuffing, then top with turkey.
Combine 1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise with cranberry sauce; evenly spread over turkey.
Combine remaining 1/2 cup Mayonnaise, potatoes, and cheese in a large bowl. Evenly spread on turkey, then top with remaining 1-1/2 cups stuffing.
Bake for 40 minutes or until heated through. Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.

We didn’t cook anywhere near as much as usual this year for Thanksgiving, so we didn’t have many leftovers to speak of for a change. I do a modified chicken cordon bleu recipe with stuffing that is similar to this!
