My kids are just in love with Monsters Inc. so we had a little Monsters University themed party the other day at home. I came up with some fun Monster University snacks and crafts and we also watched the Monsters University movie which, a great movie for the whole family as it not only kept the kids entertained but kept us, the adults, laughing along as well.
To make the Monsters University Mike quesadillas I used spinach wheat tortillas, not only did they provide the green color for our favorite Monsters Inc. monster but they are also more nutritious. I am all for sneaking some veggie into the food whenever I can since my kids are kind of picky when it comes to food.
Monsters University Mike Quesadillas
Ingredients
- 8 spinach wheat tortillas
- 1 cup of shredded cheese I used fiesta blend
- 1/4 cup cooked chicken shredded
- 2 tablespoons of tomatillo sauce
- sour cream
- black olives
Instructions

Fill the tortillas with shredded cheese, you can also add some shredded chicken and just a little bit of tomatillo sauce (make sure it's not hot as some of the bottled tomatillo sauces are a little bit spicy) to add some flavor.

Spray a pan with no stick spray and heat on medium heat.

Place the quesadillas on the pan for a minute or two until they are just a bit crunchy and cheese has melted.

Turn around once and heat for another minute or two.

Remove the quesadillas from the pan and let stand for a few minutes so they are not too hot.

Using a pair of kitchen scissors cut up the quesadillas into egg shaped Mike heads, then cut two small triangles for the ears and if you want to you can also cut legs and arms.

With some sour cream make an eye in the center of the mister heads and place half of a black olive in the center.

Cut a few black olives in into thin slices and use the slices to form the smiling mouth

I really like how this Quesadilla meal was presented. I just know kids would all love to have a party with this theme. I understand fussy eaters and how it can be difficult to please them while offering balanced nutrition. Looks like you’ve accomplished both these important factors into style.
