This year has gone by so quickly. I can’t believe that summer is already in full swing and that the 4th of July is almost here. We always get together with friends and family to celebrate the 4th of July and we like to make sure that the occasion is fun and festive.  We are usually in charge of dessert and this year I thought I would create something that is not only fun to eat but also has a colorful and patriotic presentation making it ideal for a 4th of July party or get together. I also wanted something that was refreshing since we will be spending a lot of time outdoors.

Juicy Gels for summer

I love summers in Florida, yes they can be a little hot but you don’t really mind the heat when you are at the beach and we spend a lot of time at the beach. Sometimes I do get a bit nostalgic remembering the summers I spent back home in Guatemala so for this recipe I wanted to incorporate a flavor that always brings me back memories of summer and the volcanic black sand beaches back home: coconut.  I remember my parents always stopped at Sarita, an ice cream shop that was on the way to the beach, and I would always get a coconut ice cream.

4th of July party snacks and food

My kids really like the Snack Pack Juicy Gels and we usually have some around the house. Now they come in a new larger presentation with 60% more per cup and the bigger cups with more product where ideal for what I had in mind.  I started by designing a printable 4th of July cake banner and used two red and white paper straws and some twine along with some 4th of July themed ribbon to decorate the cups.  Then I used the Juicy Gel to create some tropical flavored cups combining them with the coconut ice cream, fresh fruit and Redii Whip.

4th Of July Fruity Cups And Free Printables

Ingredients

  • Snack Pack Juicy Gels
  • Coconut ice cream
  • blueberries
  • raspberries
  • Redii Whip

Instructions

  1. Remove the gel from the cups and cut into small cubes.
  2. Put a few tablespoons of the cubed Juice Gel back in the cups to create a layer about 1 inch deep.
  3. Add a couple of tablespoons of coconut ice cream.
  4. Add a layer of fresh blueberries.
  5. Top with Redii Whip and decorate with blueberries and raspberries.

The cups will be a huge hit at your 4th of July party! My kids love them and so did the adults. The best part is how easy it was to put these together; even the kids helped, if eating half the Juicy Gels can be considered help.  You can download the free printable 4th of July cake banner HERE and make them at home.
