These chicken fajita enchiladas and Mexican chicken soup recipes are so easy to make and perfect for a weeknight dinner. To make these, I got creative in order to save time and used products we get at our Walmart neighborhood store every week. By using Pace® mild salsa, Campbell’s® Condensed Chicken Noodle Soup, and a few other ingredients I already had at home I was able to create a delicious dinner in less than 30 minutes!Ready to shop for delicious Campbell Soup Company products? As kids get back to school and our lives go back into a hectic schedule I wanted to find ways to make our favorite after school dinner recipes in an easier way so that I was able to spend more time with my family and less time in the kitchen. In order to do that I decided to take a few shortcuts when it came to two of my favorite recipes: chicken enchiladas and Mexican chicken noodle soup.
For the chicken fajita enchiladas I used Pace® mild salsa combined with Swanson® Premium Chicken to create a delicious and thick enchilada sauce in minutes! And I gave the traditional chicken noodle soup a Mexican twist by adding Pace® mild salsa to a can of Campbell’s® Condensed Chicken Noodle Soup, I also added some lime juice and cilantro and the result was delicious! Easy Chicken Fajita Enchiladas Ingredients- 3 cans of Swanson® Premium Chicken
- 1 packet of fajita seasoning mix
- 1 tablespoon vegetable oil
- 1 medium red onion, sliced
- 2 medium bell peppers, stemmed, seeded and sliced into 1/2-inch strips
- 1/4 cup low-sodium chicken broth
- 6 to 8 flour tortillas
- Fresh cilantro
- Crema
For the Enchilada Sauce
- 1 ½ cup Pace® mild salsa
- 1/4 cup low-sodium chicken broth
Instructions
- Preheat the oven to 375°F.
- Heat 1 teaspoon of the oil in a large skillet over medium-high heat.
- Add onion and cook until golden and soft, about 2 minutes.
- Add peppers and cook until softened and golden brown, about 3 to 5 minutes.
- Add chicken, fajita seasoning and chicken broth and cook until sauce is reduced; about 2 minutes.
- While the fajitas are cooking combine the salsa and chicken broth in a blender and blend until smooth.
- Spread ¼ cup enchilada sauce in the bottom of an 11×8 inch baking dish.
- Stir ¾ cup salsa, sour cream, chili powder, chicken and cheese in a large bowl.
- Spoon about 1/3 cup chicken fajita mixture down the center of each tortilla.
- Roll the tortillas and place them in the baking dish seam-side down.
- Pour the remaining enchilada sauce over the filled tortillas.
- Bake for 20 minutes or until the enchiladas are hot and bubbling.
- Top with the crema and fresh cilantro.
- 1 can Campbell’s® Condensed Chicken Noodle Soup
- ½ cup water
- 1/2 cup Pace® mild salsa
- 2 tablespoons freshly squeezed lime juice
- Fresh cilantro
- Add Campbell’s® Condensed Chicken Noodle Soup to a small saucepan over medium heat, add salsa and water.
- Bring to a boil and remove from heat.
- Add lime juice and cilantro.
- You can also add some chipotle pepper for some additional heat.
Using Swanson® Premium Chicken, which is cooked and ready to use is a great shortcut that saves so much time! And I love that it’s low fat and heart healthy!
We always Campbell’s® Condensed Chicken Noodle Soup at home, it’s a traditional favorite. I used to love it as a kid and now I love sharing it with my own kids. I love chicken fajita enchiladas. The recipe I have is nowhere near this easy so I think I’m going to replace my recipe with this one!

The fajita chicken enchiladas look super simple and I can’t wait to try them. My family loves my homemade enchiladas but they take so long to prep, roll and bake so being able to go from table to tummy in less than 45 minutes is a win in my book. Oh and we always add a sprinkle of cotija cheese on top. Cotija pairs so well with crema and adds a touch of authenticity.
