I am a huge fan of traditional chimichurri which I usually put on steak. However, this avocado chimichurri is, by far, the best chimichurri sauce I’ve ever had. This version is so much creamier and smoother. I could just add it to everything, from chicken and steak to fish. When drizzled over the Angus meatballs the combination of flavors and textures is just sublime. What is chimichurri sauce

Chimichurri is a traditional Argentinian sauce made with parsley, oregano and lots of garlic. It’s red version can also include tomato and red pepper. 

Chimichurri is traditionally used to top grilled meats and sausages. As chimichurri has become more pupular outside of Argentina a lot of different versions have popped up. Some of them include a combination of parsley and cilantro, which is the version I based myself on for this recipe. 

Avocado Chimichurri Sauce

Angus Beef Meatballs with Avocado Chimichurri Sauce

Ingredients

  • 1 bag of Cooked Perfect Angus Beef Meatballs
  • 1 Hass avocado
  • 1 bunch of fresh cilantro, chopped
  • 1 bunch of fresh parsley, chopped
  • ½ cup olive oil
  • 2 tablespoons white wine or apple cider vinegar
  • 2 tablespoons lime juice
  • 2 cloves of garlic, finely diced
  • salt and pepper to taste

Avocado Chimichurri Sauce

Instructions

  • Cook the Cooked Perfect Angus Beef Meatballs following the instructions on the bag. I chose the oven method but you can make also heat them in the microwave which is much faster.
  • While the meatballs are cooking make the chimichurri sauce. Cut off the stems cilantro and parsley. Combine the cilantro, parsley, avocado, olive oil, vinegar, lime juice and garlic in a blender or food processor and blend until smooth.

Easy meatball appetizer

  • Taste and add salt and pepper to taste. 
  • Drizzle the avocado chimichurri over the meatballs and serve while still warm.

  1. These look amazing! I love homemade meatballs, haven’t found a store-bought one that tasted as good. But I haven’t tried these, so I will look for them. It would be great to be able to buy meatballs that are as good as homemade.

  2. This looks so good!! I’m obsessed with avocado, so I need to at least try the sauce. Since I’m a vegetarian I’ll need to do something else for me, but I bet that a lot of friends would benefit from this recipe.
