I could eat tacos for breakfast, lunch, and dinner; actually, sometimes I do. There’s just something about wrapping the perfect combination of flavors and textures inside a warm tortilla that makes everything in the world feel right. And tacos are so versatile you can fill them with anything you like.
One of my favorite ways to eat tacos is to share them with friends as we watch football. We’re having some friends over to watch the Big Game and I decided to create something a little different using salmon.
Homegating is a big deal for us and watching the Big Game is a celebration I look forward to all year. I wanted to make sure these came out just right so I did a test run for this new recipe and man are these tacos amazing!
I started off with one of my favorite salmon recipes and added red cabbage and a simple mango salsa. It was still missing something to balance off the heat so I came up with the idea to combine it with my favorite dip: Dean’s Guacamole Dip drizzled on top of my tacos! Afer all, Dean’s Dips are so good there is no reason to limit the way you eat them and add them to other homegating recipes!
We always have Dean’s Dips at home; it’s delicious and a convenient solution for a delicious appetizer to enjoy while watching football games on TV. You can’t watch a football game without some chips and dip! We love Dean’s Dip dairy-fresh taste and it’s cool creamy taste and texture was perfect for adding that refreshing touch to the chipotle salmon tacos.
The combination of the heat from the chipotle rub, the sweetness of the mango and the coolness of the avocado crema made using Dean’s Guacamole Dip come together to create one of those recipes that will make your taste buds jump with joy.
Grilled Chipotle-Rubbed Salmon Recipe
Ingredients
- 1 tsp smoked paprika
- 1/2 tsp chipotle chili powder
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Heat your indoor contact grill.
- Combine all the spices in a small bowl.
- Squeeze lime juice over salmon then rub in the spices.
- Set aside for 5 minutes.
- Place the salmon on the contact grill for about 3 minutes or until the salmon easily flakes when poked with a fork and is opaque throughout.
Easy Mango Salsa Recipe
Ingredients
- 2 cups mango, diced
- 1 medium red bell pepper, chopped.
- ½ cup chopped red onion
- ¼ cup packed fresh cilantro leaves, chopped
- ¼ cup lime juice
- salt, to taste
Instructions
In a medium bowl, combine the mango, bell pepper, onion, and cilantro. Add lime juice and mix well. Season to taste with salt.
Chipotle Salmon Tacos With Mango Salsa
Ingredients
- Grilled chipotle-rubbed salmon, see recipe above.
- 1 cup mango salsa, see recipe above.
- 8-10 corn tortillas
- 1 cup shredded red cabbage
- 1/4 cup Dean’s Guacamole Dip
- Queso fresco
- chipotle chili powder
Instructions
1. Break up the salmon into pieces and place on corn tortillas.
2.Top each taco with shredded cabbage and mango salsa.
3. Place Dean’s Guacamole Dip in a sealable plastic bag. Cut off a corner of the plastic bag and drizzle on top of the tacos.
4. Sprinkle queso fresco and chipotle chili powder.
5. Serve warm.
If you love spicy foods leave the recipe as it is, if you like your food milder reduce the amount of chipotle and add a bit more mango salsa and avocado crema to your tacos to cool off some of that chipotle heat.
I always buy Dean’s Dips at my local Target and always have them on hand for dipping with friends while watching football games.
