This delicious strawberry jalapeño glazed tenderloin is easy to make and perfect for entertaining during the holidays.
During the holidays our home is always filled with family coming and going. During this time of the year I don’t want to spend all day in the kitchen so I am always looking for ways to make food that is festive but easy to prepare. That is why I really like the Smucker‘s Fruit & Honey Fruit Spreads. They are naturally sweetened with honey and with the perfect balance of tart and sweet, Smucker’s Fruit & Honey Fruit Spreads are a simply delicious way to wake up your holidays!
We always have the Smucker‘s Fruit & Honey Triple Berry Fruit Spread, Concord Grape Fruit Spread and the Strawberry Fruit Spread at home and we have used them not only to spread on our toast or waffles in the morning but on wide variety of recipes from appetizers and sweet and savory meats to vinaigrettes. I recently tried the Smucker‘s Fruit & Honey Blueberry Lemon Fruit Spread and Smucker‘s Fruit & Honey Strawberry Jalapeno Fruit Spread and I really like the combination of these flavors which really let you get creative in the kitchen.
I had my parents over last weekend, they came over unannounced and stayed for dinner. We love having them over but sometimes they catch us by surprise and we don’t have anything ready. On this occasion I decided to try the new Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread; first I combined it with goat cheese to make crostini and then I used it as a glaze for a pork tenderloin.
With the perfect balance of sweetness and heat the Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread gave the pork a delicious and extraordinary taste.
Strawberry Jalapeño Pork Loin Recipe
Ingredients
- 2½ pounds boneless pork loin roast
- ¼ cups brown sugar
- ½ tablespoons kosher salt
- ½ tablespoons dried chipotle pepper
- 1 teaspoons ground ginger
- 2 teaspoons garlic powder
- 2½ teaspoons onion salt
- ½ cup Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread
- 2 tablespoons grainy mustard
Instructions
Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius)
In a large resalable plastic bag, combine brown sugar, salt, ginger, garlic powder, onion salt and dried chipotle pepper seasoning.
Place tenderloins in bag and shake,coating meat evenly. Refrigerate for 10 to 15 minutes.
Set a skillet coated in cooking oil over medium heat.
Sear the tenderloin in the skillet. When it has browned on one side, turn it over using a pair of tongs and brown the other side.
Place the tenderloin in a roasting pan.
Combine the Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread and mustard in a food processor and pulse until well combined.
Brush the strawberry, jalapeño and mustard glaze on the pork loin turning it to cover all sides.
Place the pan in the oven and roast for about 15 -20minutes, or until the internal temperature reaches 145 degrees Fahrenheit (63 degrees Celsius).
Allow the pork to rest for 10 minutes before serving.
I have made sweet and spicy fruit salsas before but I had never used a sweet and spicy spread as a glaze. This pork loin recipe was such a hit that I will be making this again for sure.
