If you have been reading the blog lately you might have noticed that I have been using mango in a lot of my recipes. My parents have a mango tree in the back yard and this year the tree is weighed down with ripe mangos, we have so many mangos at home and more come every week. That is why we have been using mangos in many recipes lately from mango and bacon potato salad and mango pasta salad to mango, watermelon and avocado salsa.
I’ve always liked mango but until now I had not realized how versatile it is and how it can be used in everything from sauces, to salads and beyond. This strawberry and mango pico de gallo has a fresh and crispy taste that combined with the tanginess of the lime and the heat of the jalapeños makes for an exciting combination of flavors.
