With the hustle and bustle of the holidays, which for us are still not over as we are still waiting for the Dia de los Reyes on January 6th, we are ready to take it easy with the cooking and cleaning and are looking for meals that are easy, hearty and require little cleanup. What could be better than a Marie Callender’s pot pies: the perfect comfort food for the cooler weather.
So on my latest trip to Walmart I picked up some Marie Callender’s individual pot pies, which where perfect to share with the family and it was great that there was practically no cleanup afterwards as the pot pies cook in the microwave in their own box. To accompany the pot pies, we got two varieties the Chicken Pot Pie and the Creamy Parmesan Chicken Pot Pie so each of us picked our favorite one, and I created an easy cranberry fruit salad recipe.
Cranberry Fruit Salad Recipe: the Perfect Side Dish for Marie Callender's Pies
Ingredients
- 1/2 package 6 ounces fresh or frozen cranberries
- 1/2 cup water
- 1/4 cup sugar
- 2 medium apples diced
- 2 medium firm bananas sliced
- 1 cups fresh blueberries
- 1 can 11 ounces mandarin oranges
- 1 cup fresh raspberries
- 1 cup fresh strawberries halved
- ¼ cup orange juice
- rind from one orange
- Ricotta cheese
Instructions

In a large saucepan, combine the cranberries, water and sugar.

Cook and stir over medium heat until berries pop, about 15 minutes.

Remove from the heat; cool slightly.

In a large bowl, combine the remaining ingredients.

Add cranberry mixture; stir gently.

Top with crumbled ricotta.
The cranberry fruit salad was the perfect fresh compliment to the hearty and delicious pot pies.
I have to admit I had not had a Marie Callender’s pot pie in quite a while and was pleasantly surprised by the fact that the pies came out of the microwave golden brown. As I took the first bite I had a hard time believing this was a frozen pie heated in the microwave: the crust was flakey and delicious and tasted home made! The pies where the perfect size and hearty enough that I was not left feeling hungry even though I had just had a long run and after exercising I am usually really hungry.

i thought I was the only one that enjoyed fruit salad as my side dish to pot pie or any savory pie! It is the perfect pairing.
