There are many things that remind me of Guatemala and of spending time with my cousins and friends in Miami and of coarse all of those memories are tied to food. So as I was thinking for an easy appetizer idea for this weekend I got inspired by those unique flavors that are tied to memories of family, friends and culture. I wanted to make appetizers that could be eaten in just one bite so I decided to make an easy chipotle avocado crab dip recipe that can be used to top your favorite RITZ® crackers making them easy to share with friends and the ideal botanas for those summer get togethers with the familia.

Spicy Chipotle Avocado Crab Bites
Ingredients
- RITZ® crackers
- 2 6 onz cans of crab meat
- 1/4 cup light mayo
- 1/4 cup chopped cilantro
- 3 tablespoons of lime juice
- 1 tablespoon chipotle seasoning or 1/2 teaspoon chipotles in adobo sauce
- 1/2 tablespoon onion powder
- 1/2 teaspoon salt
- 3 hass avocados
Instructions

In a large bowl, combine the light mayonnaise, 1 tablespoon of lime juice, cilantro, onion powder, chipotle seasoning and crab meat.

In a separate bowl mash the avocados and add 2 tablespoons of lime juice and salt and pepper to taste.

Spread a thick layer of the guacamole on the RITZ® crackers and top with the crab salad.
Back home one of my favorite salads was a crab salad that my mother would make and she would serve it on an avocado. This version of it is the perfect to Snackify and to share when you get together with family or friends and it’s so fresh that it’s the ideal botana (appetizer) now that the weather is warmer and summer is almost here.
These did not come out too spicy and even my daughter loved them but if you want to give them a bit more of a kick I would recommend doubling the amount of chipotle and topping them off with a slice of fresh jalapeño.
To make these bite sized snacks even easier to eat you can also turn them into a little sandwich by adding another RITZ® cracker on top but I thought these looked to pretty to cover up, at least for the pictures.
For this recipe I used the Honey Wheat RITZ® crackers and this gave this recipe a bit of a sweet after taste which I think really brought out the tangy flavor of the avocado and the crab salad. I also tried making it with the Reduced Fat RITZ® which have 1/3 less fat than the regular crackers and you could not tell the difference between the regular RITZ® and the reduced fat ones. I got both varieties of the RITZ® crackers on my weekly grocery shopping trip to my neighborhood Walmart.
