Food is essential to our Latino culture, so we always try to incorporate flavors and ingredients that make us feel more connected. It brings us closer together as we watch football games and cheer for our favorite teams.
Today I want to share the delicious baked chorizo and chipotle queso dip recipe, a cross between the classic artichoke and spinach baked dip. This chipotle recipe combines cream cheese with Cotija and Oaxaca cheese for that extra flavor and texture. Plus, the onions and sweet bell peppers add more depth to the bold flavor of chorizo. Finally, the dip gets a little kick from the smoky chipotle peppers in adobo. It makes it the perfect game-day snack to nibble while cheering on your favorite players!
What Are The Ingredients for Chorizo Chipotle Queso Dip?
The key ingredients for this delicious dip recipe are chipotle chiles, chorizo, and cheese. You can buy a can of chipotle chiles in adobo sauce at your local supermarket. For the chorizo, any spicy Spanish pork sausage will do!
I used fat-free sour cream for this recipe, but if you can find any low-fat Mexican crema, better. And don’t forget the cream cheese, which will make this Chipotle dip a lot creamier. You can also replace the Queso Cotija with grated Romano cheese and the Oaxaca with mozzarella. It will change the taste slightly, but the creamy taste of this chipotle queso dip will remain!
How To Make Baked Chorizo And Chipotle Queso Dip?
- Preheat the oven to 350 degrees. Spray a small baking dish with cooking spray and set aside.
- In a medium pan, sautee the onions for a couple of minutes until translucent.
- Add the sweet bell peppers and cook for another 5 minutes or until they are soft.
- Mix the cream cheese, sour cream, and chipotle in a bowl until smooth.
- Stir in the Queso Cotija, ½ of the Oaxaca cheese, garlic, salt, and pepper. Mix until combined.
- Add in the onion and sweet bell pepper mix and the chorizo.
- Spread the mixture in the prepared baking dish and top with the remaining ½ cup of Oaxaca cheese.
- Bake for 15 minutes or until heated through. Broil for an additional minute or two to get the cheese more browned, if you prefer.
- Serve immediately. And don’t forget a bowl for the tortilla chips!!!
