This easy recipe for Guatemalan chojin con chicharrones, a delicious radish salad,  is so simple to prepare. Chojin is a traditional Guatemalan dish that combines the flavors of fresh radishes, tomatoes, and onions, resulting in a delightful and refreshing salad. For this Guatemalan chojin recipe we added  crunchy chicharrones (pork rinds) as the topping. This recipe for chojin is not to be confused with the Guatemalan chojin bataneco with is a stew that is typical of a specific region in Guatemala. When Guatemalan’s mention chojin they are usually referring to this crispy and bright flavored radish salad. If you have not tried this traditional Guatemalan food yet you’re in for a treat. And the best part is that this Guatemalan salad is so easy to make!

Chojin is a popular dish in Guatemalan cuisine known for its refreshing flavors. It consists of a mixture of radishes, tomatoes, and onions, creating a salad similar to pico de gallo or fresh salsa. This radish salad is often served alongside crunchy chicharrones (cruchy pieces of fried pork rind), pork carnitas, or flavorful buche (pork stomach or esophagus). 

My favorite way to eat chojin is to pile the salad on toasted tortillas and top it all off with a generous serving of sliced jalapeños and crispy chicharrones. The combination of the crunchy base, the bright flavors of this radish salad, the heat of the chili and the crunchy and salty chicharrones  is a match made in heaven. 

This vibrant and zesty salad with its colorful ingredients has a refreshing and bold taste and makes for a great appetizer, side dish or snack that is perfect to enjoy alongside a cold glass of agua de tamarindo.

What are the Ingredients for Making Guatemalan Chojin Radish Salad?

The main and most important ingredient for making chojin is to use fresh radishes. The radishes are mixed with other fresh ingredients including tomatoes, onion, jalapeño pepper or chiltepe pepper for a spicier version. The salad is finished off by adding fresh mint, fresh cilantro and lime juice . Some versions also include orange juice (or naranja agria).  

You can top your chojin with either pork chicharrones, buche, or carnitas. Pork chicharrones are crispy fried pork rinds that add a savory and crunchy element to the salad. Buche refers to pork stomach or esophagus that has been cooked and seasoned, adding a rich and flavorful twist to this dish. Carnitas are tender and juicy slow-cooked pork pieces that bring a hearty and succulent touch to the salad. Whether you prefer the crispy chicharrones, the flavorful buche, or the tender carnitas, they will complement the refreshing combination of radishes, tomatoes, and other ingredients in the chojin salad.

The Difference Between Chojin con Chicharron Salad and Chojin Bataneco

The Chojin salad although it has many regional variations always has a radish salad as a base. However there is a completely different Guatemalan Chojin recipe: the Chojin Bataneco. Chojin Bataneco is a popular dish from San Sebastián, Retalhuleu, Guatemala. Unlike the radish-based Chojin salad, Chojin Bataneco is a beef stew that is traditionally enjoyed during the celebration of San Sebastián Mártir. The dish is made by roasting and cooking various cuts of beef with a variety of vegetables to create a flavorful broth. Chojin Bataneco holds cultural significance and is prepared using traditional cooking methods, such as roasting the meat over an open fire. The term “Bataneco” refers to the people from Retalhuleu and their traditional weaving techniques.

Storing Leftovers

Weather you made a double batch to enjoy later or had some leftovers here are some tips for storing chojin radish salad:

  • How to Store Leftover Chojin:  Chojin can be stored in the refrigerator to keep it fresh for a longer period. Transfer the salad to an airtight container or cover it tightly with plastic wrap. This will help retain its flavors and prevent it from drying out. Make sure that you only refrigerate the salad without the chicharron, carnitas or buche. These meats must be stored separately and added to top the salad right before serving.
  • How Long Can Chojin be Refrigerated? This crisp radish salad is best enjoyed when it’s fresh and crisp. It is recommended to consume the salad within 2 to 3 days for optimal taste and texture. Beyond that, the radishes and other vegetables may start to lose their crunch and the flavors can become less vibrant.
  • Can You Freeze Chojin?  Unfortunately, this radish salad is not suitable for freezing. Freezing can cause the vegetables to become mushy and lose their crispness. Additionally, the texture and flavors may be altered when the salad is thawed. It’s best to enjoy radish salad fresh or make smaller portions that can be consumed within a few days.

  • 1 cup of chicharrones (pork rinds)
  • 8 large radishes, diced finely
  • 1 Roma tomato, pulp and seeds removed, finely chopped
  • 1/2 white onion, minced
  • 1 jalapeño pepper, seeded and stemmed, finely minced
  • ¼ cup chopped fresh mint
  • 2 tablespoons of orange juice or sour orange juice (naranja agria)
  • 2 tablespoons of lime juice
  • Salt and pepper to taste
  • 4 tortillas, toasted

Step-by-Step Instructions for Making Guatemalan Chojin 

  • Remove the pulp and seeds from the tomato and finely chop it.
  • Mince the onion, jalapeño pepper, mint, and cilantro, ensuring they are finely minced.
  • Trim off the stem and root ends of the radishes, then finely dice them.
  • In a mixing bowl, combine the diced radishes, chopped tomato, minced onion, jalapeño pepper, and mint.
  • Add the lime juice and orange juice to the mixture.
  • Slice the chicharrones and set aside.
  • Place a couple of spoonfuls of chojin salad on tortilla tostadas and top with the chicharron slices and more fresh mint. Serve immediately.
