This spicy Elotes Mexicanos recipe is the perfect Cinco de Mayo party food!

Elotes MexicanosI love celebrating Cinco de Mayo and getting together with friends and family, it’s certainly a great excuse to throw a Fiesta but it’s also a great opportunity to educate my friends about “real” Mexican and other Latino traditions and foods as Cinco de Mayo has become a day which most people relate to Latinos in general.

Traditional foods for Cinco de MayoCinco de Mayo is not Mexico’s independence day like many people assume. Cinco de Mayo commemorates the Mexican Army of 4,500 men’s victory over the 6,500 French army at the Battle of Puebla in 1862. In Mexico, it is not celebrated nationally but only in Puebla. In the 1960s and 1970s, civil rights Chicanos related the Battle of Puebla to their quest for respect in the United States and publicized it as a popular holiday. Most people do not know about the real meaning of this holiday and why it has become so popular and today it is mostly used as just another excuse to party and wear sombreros.

We have invited some friends over and I wanted to share with them some more traditional flavors and foods without spending hours preparing them so I got some Delimex taquitos just like the flautas my mom used to make, well actually she still makes them all the time! I also got some Delimex tamales and made elotes Mexicanos (Mexican street corn), frijoles volteados (refried beans) and watermelon aguas frescas (refreshing fruit drinks).

Spicy Elotes Mexicanos

  • 4 ears of  corn
  • 2 tablespoons butter melted
  • 2 tablespoon mayonnaise
  • 2 tablespoons of Mexican crema
  • 4 tablespoons cotija cheese
  • dried ground chipotle or piquín chile
  • 1 tablespoon chopped cilantro
  • 1 lime wedge


  1. Grill corn until lightly charred and remove from grill.
  2. Brush melted butter on corn.
  3. Mix mayonnaise and Mexican crema and spread mixture over corn.
  4. Top with crumbled cotija cheese, fresh chopped cilantro
  5. Sprinkle with salt, ground chile, and lime juice to taste.

elotes mexicanosFor decorations I used papel picado garlands and some beautiful and colorful textiles we bought on our last trip to Guatemala.  I wanted to stay away from the stereotypical sombreros, sarapes and piñatas and bring some real Mexican culture into our little get together.


I enjoy sharing with others a little bit of my Latino culture and really like that Delimex uses time-honored recipes, recipes that remind me of those home made traditional Mexican dishes and the best part is that I can enjoy them with my family without having to spend hours in the kitchen!
